Allergy-friendly Product Hacks: Annie’s Cinnamon Rolls
A note from Lisa: If someone in your family has food allergies, then you can appreciate how much work goes into cooking safe, allergy-friendly foods. And if you’re like me, the holidays require even more allergy-friendly baking and cooking. And if you’re also like me, then you are in need of some allergy-friendly product hacks to make feeding your family just a little easier.
My friend Kelli is my go-to source for allergy-friendly cooking hacks. And she graciously offered to share some of her favorites on this blog. To learn more about Kelli’s food allergy journey, you can listen to Episode 01 of my podcast, Let’s Talk Food Allergies.
One of my favorite allergy-friendly products is Annie’s Organic Cinnamon Rolls. They contain wheat, but are free from the other top allergens. These cinnamon rolls are great and take less than 30 minutes to make, but I want to share some other ways to serve them:
Cinnamon Roll Waffles
Cinnamon Roll Monkey Bread
Apple Cinnamon Cake
Apple or Pear Pie
Cinnamon Roll Waffles
What you need:
1 tube of Annie’s Organic Cinnamon Rolls
non-stick spray
4-inch waffle iron
Instructions:
Place one unbaked cinnamon roll in the waffle iron and close lid to squeeze flat. Cook for ~2 minutes, until golden brown. Serve with powdered sugar or drizzled with the icing that comes in the can of cinnamon rolls. For smaller waffles, cut each cinnamon roll in half. Squish into a disc and place in waffle iron. Cook for 90 seconds - 2 minutes.
Cinnamon Roll Monkey Bread
What you need:
1 tube of Annie’s Organic Cinnamon Rolls
nonstick cooking spray
1/4 cup sugar
3/4 teaspoon cinnamon
1/4 cup vegan butter (check food label for your known allergens)
Instructions:
Preheat oven to 350 degrees F. Spray a square baking dish with nonstick cooking spray. In a small bowl, combine sugar and cinnamon. Cut each cinnamon roll into quarters. Gently roll them in the cinnamon-sugar mixture and layer in baking dish. Melt butter and mix into remaining cinnamon-sugar mixture. Pour over the cinnamon roll pieces, covering evenly. Bake for 30 minutes or until golden brown. Cool for about 10 minutes, then drizzle with icing that comes in the cinnamon roll can.
Apple Cinnamon Cake
What you need:
1 tube of Annie’s Organic Cinnamon Rolls
20-ounce canned apple pie filling
Allergy-friendly ice cream or whipped cream (optional)
Instructions:
Preheat oven to 350 degrees F. Spray a 9-inch square baking dish with nonstick cooking spray. Cut each cinnamon roll into quarters. In a large bowl, gently combine cinnamon roll quarters and apple pie filling. Pour into baking dish and bake for 22-25 minutes, or until golden brown. Cool for about 10 minutes, then drizzle with icing that comes in the cinnamon roll can. Serve warm with allergy-friendly ice cream or whipped cream (optional).
Easy Holiday Apple Pie
What you need:
1-2 tubes of Annie’s Organic Cinnamon Rolls
20-ounce canned apple pie filling (can substitute pear pie filling)
Allergy-friendly ice cream or whipped cream (optional)
Instructions:
Preheat oven to 350 degrees F. Spray a 9-inch pie pan with nonstick cooking spray. Smush cinnamon rolls into pie pan to form pie crust; use some or all of second tube for thicker crust. Bake for 10 minutes, then remove and add pie filling on top. Bake for 10-12 more minutes. Immediately drizzle with icing that comes in the cinnamon roll can. Serve warm with allergy-friendly ice cream or whipped cream (optional).
